English Lemon Shortbread Bars

Tea time anyone? I don't know about you, but any time I watch a show or movie set in merry old England, I'm always fascinated with the amazing treats and goodies they have with each cup of tea. Something about these bite-sized, handheld dishes draws me in and leaves my taste buds wanting to try each one.

While sunny Southern California is not quite the same as the good old Monarchy, we thought it would still be fun to bake up some delicious tea time treats anyone could enjoy. Best of all, you don't even need to have the tea in order to try them. Just a few cups of our impressive Alta Artisan Flour and a few fresh lemons and you'll be baking up some sweet snacks in no time! Grab your favorite tea dish and raise that pinky, it's time to bake up some English Lemon Shortbread Bars!

Ingredients:
2 cups Butter, softened
1 cup Sugar
Juice from 1 Lemon
Zest from 1 Lemon
4 1/2 cups Honeyville Alta Artisan Flour

Lemon Glaze:
2 cups Powdered Sugar
Juice from 1 Lemon
Zest from 1 Lemon
4 Tbsp Butter, softened

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine butter, sugar, lemon juice, and lemon zest, and cream together with a hand mixer.

Next, add flour and mix together with mixer until a thick, crumby batter forms.

In your Norpro Non-Stick Baking Sheet, sprayed lightly with grease, firmly press batter evenly across pan.

Bake at 350 degrees for 30-35 minutes, or until top is lightly golden brown. Remove and let cool completely.

Next, make your glaze by combining powdered sugar, lemon juice, and lemon zest, and butter and beating together.

Spread glaze evenly over bars. Slice and serve.
