November is officially here, and that can mean only one thing: Thanksgiving! Are you as excited as we are? The crisp air, the crunchy leaves, and the sweet aroma of baked Turkey and stuffing fill the air and make everything right in the world.
By far, my favorite part of Thanksgiving would have to be the dinner rolls. Nothing brings this festive meal together like these buttery rolls of deliciousness. Freshly baked, warm and soft, you know your heart skips a beat when you see them on the Thanksgiving table.
But instead of simply purchasing these from the local store or bakery, why not bake them up yourself? Believe it or not, it's easier than you think! With some help form the WonderMix and WonderMill, you can bake up your own warm, delicious wheat rolls literally within an hour or two. And really, aren't freshly baked rolls way better than dry, store bought rolls? Grab your apron, it's time to make some Wheat Dinner Rolls!
Ingredients:
1 1/2 cups Honeyville Hard White Wheat
1 1/2 cups Honeyville Hard Red Wheat
3 cups Hot Water
1/4 cup Butter, melted
1/3 cup Sugar
1 Tbsp Himalayan Salt
4-6 cups Honeyville Alta Artisan Bread Flour
3 Tbsp SAF Yeast
Yields: 24 rolls
Directions:
First, mill your flour.
In your WonderMill, Nutrimill, or Komo Classic Mill, combine hard white wheat and hard read wheat and mill together. This should give you about 5 cups of freshly milled wheat flour.
In your WonderMix, combine the following ingredients in this order: Water, butter, sugar, salt, milled wheat flour, and yeast. Turn mixer on and as ingredients mix, add alta artisan flour 1 cup at a time until dough begins to pull away from the sides. Knead in machine for 5-6 minutes.
Remove dough from mixer, place in a greased bowl, cover, and let sit for 30-40 minutes.
Once dough has doubled in size, punch down and remove from bowl.
Using your Wüsthof Bench Scraper, dice dough into small pieces, about the size of a racquetball.
Shape each dough ball into a roll, and place on your USA Pan Baking Sheet, lined with parchment paper.
Once sheet is full, cover with plastic wrap and let sit for 20-30 minutes.
Preheat oven to 400 degrees.
After rolls have sat, brush each roll with melted butter.
Place in 400 degree oven, knock the temperature down to 350, and bake for 30 minutes.
Remove and, while still warm, brush tops again with melted butter.
Big, buttery, and fluffy on the inside, these delicious treats have everything you love in a traditional dinner roll. The combination of milled white and red wheat give each roll a delicious, whole grain flavor that you simply won't find anywhere else.
