Blueberry Oat Muffins
















Blueberry and oats. Perhaps two of the most recognizable names in the breakfast world. Whenever we hear these two words, our first thoughts are a warm bowl of delicious oatmeal, topped with freshly picked blueberries. Isn't your mouth watering just thinking about it?

But what if I told you that these two titans of morning meals can be combined in a new, delicious way? What if I told you that you can bake these amazing ingredients together to make a mouth-watering, light and fluffy, and oh so healthy breakfast muffin?

Using our amazing Quick Rolled Oats and our tasty Freeze Dried Blueberries, we've created an over-the-top, absolutely delicious muffin that is sure to start your mornings off right and give you that boost you need each day. Grab some flour and an apron, it's time to bake up some Blueberry Oat Muffins!

Ingredients:
2 cups Honeyville Alta Artisan Flour
1 cup Honeyville Quick Rolled Oats
2/3 cup Sugar
1 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Himalayan Salt
1 1/2 cups Greek Yogurt
2 Eggs
4 Tbsp Butter, melted
1 tsp Vanilla
1/2 cup Honeyville Freeze Dried Blueberries

Directions:
Preheat oven to 350 degrees.

In a large bowl, combine flour, oats, sugar, baking powder, baking soda, and salt, and whisk together.

In a medium bowl, whisk together yogurt, eggs, butter, and vanilla.

In a small bowl, re-hydrate blueberries by soaking in water until soft, then draining any excess liquid.

Mix wet and dry ingredients together until a thick batter forms. Gently fold in blueberries until combined.

Line your USA Pan Muffin Pan with muffin cups, then scoop out batter into each cup. Don't worry about filling them up all the way.

Bake at 350 degrees for 20-25 minutes, or until tops are golden brown. Remove and let cool on a wire rack before enjoying.
