Eggnog and cookies. For me, there is no better Holiday combination than these two treats. Whether it's decoration the Christmas tree or sitting around a warm fire, a batch of fresh baked cookies, combined with a smooth glass of eggnog, fills my heart with Holiday cheer.
But what if you could take these two Holiday treats to the next level? What if you could combine all the things you love about homemade cookies with all the tastes we get in a fresh glass of eggnog?
I'm here to tell you that you can! Using our Quick Rolled Oats and a cup of eggnog, you can bake up a treat that is not only mouth-watering and delicious, but will get you in the Holiday cheer quicker than a verse of Jingle Bells! Grab your favorite mixing spoon, we're making Eggnog Oatmeal Cookies!
Ingredients:
1/2 cup Shortening
1/2 cup Butter, softened
3/4 cup Sugar
1 cup Brown Sugar
2 Eggs
1 cup Honeyville Instant Vanilla Pudding
1 Tbsp Vanilla
1 tsp Baking Soda
1 tsp Water
1/2 tsp Himalayan Salt
1 tsp Molasses
1 cup Honeyville Quick Rolled Oats
2 1/4 cup Honeyville Alta Artisan Flour
Icing:
3 cups Powdered Sugar
1 cup Eggnog
Sprinkles of choice
Directions:
Preheat oven to 375 degrees.
In a large bowl, beat butter and shortening together until smooth. Add sugars and eggs and beat until smooth and thick.
Add pudding mix, vanilla, molasses, baking soda, water, and salt and beat well. Gentle mix in quick oats and flour until a thick batter forms.
Pinch off tablespoon sized pieces of dough, gently roll, then place on your USA Pan Baking Sheet lined with parchment paper.
Bake at 375 degrees for 12-13 minutes, or until tops look cracked. Remove, transfer to a wire rack, and let cool completely.
While cookies are cooling, make icing by combining powdered sugar and eggnog and whisking together until a thick, but dippable icing forms.
Gently dip each cookie into the frosting. Place on wire rack and add sprinkles immediately, then let frosting dry before enjoying.
