I love cookie bars, don't you? Whenever the Holidays roll around and ovens around the country begin to warm in anticipation of all the baked goodies they'll be creating, my thoughts always turn towards delicious cookie bars. No matter what the flavor, that delicious taste and texture always get me super excited and makes my mouth water in delight.
Imagine, if you will, a warm, absolutely amazing, pumpkin-flavor infused cookie bar that has the perfect, crisp outside with the most delectable fudge-like center. Do I have you salivating yet? Trust, me, I am just thinking about it!
With some help from our Alta Artisan Flour and a little bit of Pumpkin Puree, we've baked up the perfect cookie bar for your Fall celebrations. Thick, dense, and with a unique blend of sweet pumpkin flavor and cinnamon spice, this is a cookie you simply can't resist! Say hello to our Fudge Pumpkin Bars!
Ingredients:
3/4 cup White Chocolate Chips
1/2 cup Butter, melted
1 Egg
1/2 cup Sugar
2 tsp Vanilla
1 cup Pumpkin Puree
1 Tbsp Pumpkin Pie Spice
1 tsp Cinnamon
1 3/4 cup Honeyville Alta Artisan Flour
Glaze:
1/4 cup Butter, melted
1 cup Powdered Sugar
1 Tbsp Vanilla
1/4 cup Milk
Directions:
Preheat oven to 350 degrees.
In a large, microwave safe bowl, combine butter and white chocolate chips. Melt together in microwave in 30 second increments, removing and stirring each time, until ingredients are full melted and combined. (Remember, do not overheat at white chocolate is prone to scorching)
Next, add eggs, sugar, and vanilla, and beat with an electric hand mixer until combined. Add pumpkin, pumpkin pie spice, and cinnamon, and mix until combined.
Add flour and stir until thickened.
Turn out batter into your USA Pan Square Cake Pan, lined with foil.
Bake at 350 degrees for 30 minutes.
While bars are baking, make glaze by whisking together butter, powdered sugar, vanilla, and milk until a thick glaze forms.
When bars have been removed from oven, pour glaze over the top. Allow bars to cool for at least 2 hours (or however long it takes the glaze to set up) before serving.
Thick moist, and with the perfect fudge-like texture, these bars are exactly what you've been hoping for this Fall. The flavor of the spices, along with the pumpkin, give each bar a taste that can't be beat. The glaze atop these beauties brings it all together and leaves your taste buds screaming for more!
