Do you have a thing for oatmeal cookies? In my baking life I've come to find out that people are very particular about the type of cookies they enjoy, and one of those groups are the oatmeal cookie lovers. Really, can you blame them? With all those amazing tastes and textures that bake up with each delicious cookie, it's easy to see why so many people have fallen in love with this traditional treat.
So imagine, if you will, a warm, delicious oatmeal cookie, baked with all the sweet and aromatic tastes we've come to love in these cookies, but with one subtle difference. This cookie is actually two! That's right, two delicious oatmeal cookies, sitting back-to-back with each other, and spread right in the middle of this delight is a creamy, pumpkin infused frosting. You heard me, Oatmeal Pumpkin Cookie Sandwiches! Yeah, we thought that might peak your interest! Grab your favorite spoon, it's time to mix some up!
Ingredients (Cookies):
1/2 cup Butter, softened
3/4 cup Brown Sugar
1/2 cup Sugar
1 Egg
2 tsp Vanilla
1/2 tsp Baking Soda
1/2 tsp Cinnamon
1 2/3 cup Honeyville Quick Rolled Oats
1 cup Honeyville Alta Artisan Flour
Pumpkin Frosting:
4 oz Cream Cheese, softened
2 Tbsp Butter, softened
1/4 cup Pumpkin Puree
1 tsp Cinnamon
3/4 tsp Pumpkin Pie Spice
2 cups Powdered Sugar
1/4 cup Honeyville Alta Artisan Flour
Directions:
First, make your cookie dough.
In a large bowl, using your electric hand mixer, cream together butter, brown sugar, and sugar, until smooth. Add egg and vanilla and mix well.
In a separate bowl, whisk together baking soda, cinnamon, oats, and flour.
Add dry ingredients to wet ingredients and mix together until a soft dough forms. Place batter in refrigerator and let sit for one hour.
Preheat oven to 325 degrees.
Remove dough and roll 1-2 tsp of dough into a ball and place onto your USA Pan Cookie Sheet, lined with parchment paper. Bake at 325 degrees for 9 minutes. Remove and let cool on a wire rack.
While cookies are cooling, make your frosting by combining cream cheese, butter, pumpkin, cinnamon, pumpkin pie spice, powdered sugar, and flour together in a bowl and mixing together with an electric hand mixer until smooth.
Take two cookies and smear frosting in between, then serve.
