Gluten-Free Apple Strudel Muffins
















Muffins. Aren't they the best? Nothing is better than waking up to warm, delicious muffins on a cool crisp Autumn morning. Oh the joy when you walk into the kitchen and see these delicious, hand-held delights cooling on the counter!

But what would be the perfect muffin flavor for Fall? What blend of tastes, textures, and spices, baked up in a delicious muffin, would summarize everything we love about Autumn? When it comes to making the perfect muffin for Fall, one ingredient stands out above the others: Apple.

That's right, using our delicious Freeze Dried Apples and our amazing Grandpa's Kitchen Gluten-Free Flour blend, we've created a light, fluffy muffin that is packed full of all the flavors we love in Fall! And, best of all, it's Gluten Free! Grab your apron and lets start baking!

Ingredients:
2 cups Grandpa's Kitchen Gluten-Free Flour Blend
1 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cinnamon
1/4 tsp Himalayan Salt
1/2 cup Butter, softened
1 cup Coconut Sugar
2 Eggs
1 1/4 tsp Vanilla
1 cup Honeyville Freeze Dried Apples

Strudel Topping:
1/3 cup Coconut Sugar
1 Tbsp Grandpa's Kitchen Gluten-Free Flour Blend
1/8 tsp Cinnamon
1 Tbsp Butter, diced

Directions:
Preheat oven to 375 degrees.

In a medium bowl, combine flour blend, baking powder, baking soda, cinnamon, and salt, and whisk together.

In a separate bowl, beat together butter, sugar, eggs, and vanilla, until a smooth batter forms.

Add dry ingredients to wet ingredients and mix until a thick batter forms. Gently fold in re-hydrated apples until completely incorporated.

In your greased USA Pan Muffin Pan, drop batter into each cup.

In a small bowl, whisk together strudel ingredients. Using a fork,cut butter into ingredients until they are course and crumbly. Sprinkle over the top of your muffins.

Bake at 375 degrees for 20 minutes. Remove and let cool on a wire rack.
