October is here, and that can only mean one thing: Pumpkin treats! Oh how I love this time of year, and all the amazing, pumpkin-infused dishes that pop up everywhere. My mouth is watering right now just thinking about it!
It's this absolute love of pumpkin dishes that led me to today's recipe. While I love all the flavor of pumpkin treats in the Fall, I absolutely adore cornbread! To me, nothing says autumn more than a slice of homemade cornbread and a bowl of chili. I think that might be the official dinner of Fall.
With autumn upon us, what better way to kick it off than combining these two titans of the Fall season? What better dish than one baked up with pumpkin flavor and delicious corn bread texture! What better treat to get us in the mood for cool weather, burnt orange leaves, and scarfs and mittens! Ladies and Gentlemen, I give you Pumpkin Cornbread!
Ingredients:
1 cup Honeyville Alta Artisan Flour
1 Tbsp Baking Powder
1 tsp Himalayan Salt
1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/2 cup Brown Sugar
1 cup Honeyville Yellow Corn Meal
2 Eggs
1 cup Pumpkin Puree
1/4 cup Vegetable Oil
1 Tbsp Raw Honey
Directions:
Preheat oven to 400 degrees.
In a medium bowl, combine flour, baking powder, salt, cinnamon, nutmeg, brown sugar, and yellow corn meal, and whisk together.
In a separate bowl, mix eggs, pumpkin puree, vegetable oil, and raw honey together with an electric hand mixer.
Combine dry ingredients with wet ingredients and mix until a thick batter forms. Pour batter into your USA Pan Square Cake Pan.
Bake at 400 degrees for 30 minutes. Remove and let cool completely in pan before slicing and serving.
