Pumpkin Cheesecake Cookies
















Cheesecake. Is there any better dessert than this? Rich, flavorful, and oh so delicious with every bite, there's no better end to a good meal than a slice of this creamy, dreamy treat!

So you can imagine how excited I was when I found a sweet treat that combined three of my most favorite Fall flavors, Pumpkin, Cheesecake, and Cookies! That's right, these three titans of Autumn come together smoothly to create a dish that is absolutely, positively the most amazing treat you'll have this Fall!

With help from our Alta Artisan Flour (because, let's face it, this is the best flour out there!) and a little cream cheese, pumpkin puree, and a little spice, we've created a delicious cookie recipe that combines all the flavor you love in cookies with all the creamy, soft texture of cheesecake we can't get enough of. Believe me, cookie time couldn't come quicker! Get ready, it's time for Pumpkin Cheesecake Cookies!

Ingredients:
8 oz Cream Cheese, softened
1/2 cup Butter, softened
1/2 cup Pumpkin Puree
1 1/2 cups Sugar
1 tsp Vanilla
2 cups Honeyville Alta Artisan Flour
1/2 cup Graham Cracker Crumbs
1 1/2 tsp Pumpkin Pie Spice
1/2 tsp Cinnamon

Cookie Topping:
1/2 cup Graham Cracker Crumbs
1/4 tsp Pumpkin Pie Spice

Yields: 24 cookies

Directions:
Preheat oven to 350 degrees.

In a large bowl, cream together cream cheese, butter, and pumpkin until smooth, using your electric hand mixer. Add sugar and vanilla and mix until completely combined.

Add flour, graham cracker crumbs, pumpkin pie spice, and cinnamon, and mix until fully combined.

In a separate bowl, combined graham cracker crumbs and pumpkin pie spice and whisk together to make cookie topping.

Take a spoonful of dough and roll it in your cookie topping, then place it on your USA Pan Cookie Sheet, lined with parchment paper. Repeat for each cookie (Keep in mind that the texture will be more like cookie batter than dough).

Bake at 350 degrees for 15 minutes. Remove and slightly press down on cookie, so that they are flat, then put back in the oven and bake for an additional 3-4 minutes.

Let cool on a wire rack, then serve. You can also chill these cookies before eating for an even better taste!
